Ever Imagine Making Valentines Day Cookies With Pringles?

I like getting those "typical" Valentine's gifts but honestly, it means so much more if I get something more personal, maybe something hand-made. I am sure I am not alone in thinking this way. I find a homemade meal, complete with dessert is a perfect option for my Valentine's gift (plus, it can save us money, while still having all the meaning)!

I recently discovered a great recipe that my husband, son and I all just love--Pringles Brownies! Yep, that's right Brownies made with Pringles!  It is a delicious mix of sweet and salty--a combination that I find I crave periodically! I have them on our Valentine's Day Menu! 

If you have a brownie lover on your sweet-list, these could make a wonderful Valentine's gift! Bake them, cut the out in heart shapes and tuck them back into the empty Pringles can that you decorated--wrapping paper, drawing, collage of pictures of you and your special someone...you decide, but what a memorable and well appreciated gift it would be! Here is the recipe:

Pringles Brownies

INGREDIENTS

· 6 ounces baking chocolate, unsweetened

· 3/4 cup unsalted butter or margarine

· 2 cups sugar

· 3 eggs

· 1 tsp. vanilla

· 3/4 cup flour

· 1-6.41 ounce can of Original PRINGLES, regular or reduced fat

· 1 cup coarsely chopped pecans or walnuts (optional)

· Powdered sugar for dusting  (optional)

DIRECTIONS

1.       Preheat oven to 350°F

2.       Line 13x9-inch baking pan with foil, and spray foil with cooking spray.

3.       In a glass bowl, microwave chocolate and butter on high for 2 minutes.  Stir until chocolate melts. 

4.       In a stainless steel bowl, mix sugar, eggs, and vanilla until well mixed. 

5.       Pour in butter chocolate mixture and mix well.

6.       Empty PRINGLES and flour into a food processor, and puree until very fine. 

7.       Empty flour mixture into chocolate mixture and mix well; add nuts to distribute.   

8.       Bake for 30 minutes, and cool.

I have to admit that I hadn't really put much thought into using Pringles as part of cooking--they never last long at our house! However, I have discovered that they work great in many recipes, like using your favorite Pringles flavors as coatings for chicken or fish (my husband wants to try out the Pringles Salt & Vinegar as a coating to cod).

Chicken Pringlers

INGREDIENTS

- 2 (6.38-ounce) cans of Pringles (choose your favorite flavor--BBQ, Honey Mustard, Xtreme Blastin Buffalo work good)

- 2 pounds of boneless chicken breast or chicken tenders, cut into 1 1/2" nuggets

- 2 cups of skim milk or buttermilk

DIRECTIONS

1. Preheat oven to 400 degrees F with a rack in the middle.

2. Place nuggets in milk.

3. Puree the Pringles in a food processor, and pour into a large sealable plastic bag. Place two or three nuggets at a time in the bag and shake to coat. 

4. Spray a cookie sheet with cooking spray, and place the well-coated nuggets in a single layer. Bake at 400 degrees F for 20 minutes. 

5. Remove and let stand, uncovered, 5 to 10 minutes to crisp.

Loaded Twice-Baked Taters Appetizer

INGREDIENTS

- 2 – 6.38-ounce cans of Pringles Loaded Baked Potato flavor

- 1 1/2 cup skim milk

- 1 egg

- 1 slice of cheese

- Dried chives for garnish

- Bacon bits for garnish, optional

DIRECTIONS

1.       Preheat oven to 350°F.

2.       Place one 6.38-ounce can of Pringles Loaded Baked Potato crisps in a food processor and puree until well crushed.

3.       Add milk, egg and cheese slice into mixture and puree until well mixed.

4.       Take Pringles from remaining can and place 48 crisps on a cookie sheet with the curve of the crisp and sides facing down.

5.       With a very small spoon, place a rounded scoop onto each crisp and sprinkle with dried chives and bacon bits.

6.       Bake in the oven for about 15 minutes. Remove and let cool for about 5 minutes before serving.

Crispy Cod Nuggets

INGREDIENTS

- 2- 6.38-ounce cans of Pringles Salt & Vinegar flavor

- 2 pounds cod fillets, cut into 1-inch cubes

- 2 cups of skim milk

DIRECTIONS

1. Place nuggets in milk.

2. Puree the Pringles in a food processor, and pour into a large sealable plastic bag. Place two or three nuggets at a time in the bag and shake to coat.

3. Spray a cookie sheet with cooking spray, and place the well-coated nuggets in a single layer. Bake in the preheated oven for 20 minutes. 

4. Remove and let stand, uncovered, 5 to 10 minutes to crisp.

God Gave Us Love

 Valentine's Day is the time to remember how important love is in our lives. The children's book, God Gave Us Love (WaterBrook Press, 2011) by Lisa Tawn Bergren, teaches children the importance of love even when it isn't easy! I think every needs to hear and understand how much they are loved and that even when they aren't on their best behavior, God will still love them. Laura J Bryant's bright colorful pictures fit the story perfectly and are sure to delight young children, I know they did mine!

I think God Gave Us Love would make a wonderful Valentine's gift (or any time of the year) for a young one in your life. Give them the gift of sweet without the sugar!

Nonni's Biscotti Makes a Great Valentine's Gift

Valentine's Day is the second most popular greeting card giving occasion. I always like to add something sweet to those card. This year, I am adding Nonni's Biscotti to the cards for adults. Reminder: Free Super Saturday Event at the Illinois State Museum

Head to the Illinois State Museum today, Saturday, February 11th for this month's free Super Saturday event.

Here is the theme: Get the Beat! African American Musicians

Here is the information from the Illinois State Museum website:

Families will learn about Illinois musicians and make their own beat with percussion instruments. Children will also be invited to create a mural that depicts how music makes them feel and build a wooden “harmonica” to take home. This program is being held in celebration of Black History Month.


The Super Saturday series is sponsored by the Bank of Springfield.


Bring the Whole Family to Super Saturdays!

Super Saturdays offer free, thematic activities each month. Held on the second Saturday of each month, Super Saturdays are especially recommended for children ages 4-8.

Activities are ongoing from 11:00 AM to 3:00 PM, take 30 to 40 minutes to complete, and feature take-home crafts. Parents and families are encouraged to participate. Registration is not required for this activity.
