Bob Evans Is Mad About Mashtini's Review & Giveaway

America's #1 selling refrigerated mashed potatoes, Bob Evans has taken their mashed potatoes in a whole new, fun and exciting direction with their new Bob Evans Mad About Mashed campaign which kicks off on National Potato Day on August 19, 2012!

The Bob Evans Mad About Mashed campaign encourages us to think outside the straight mashed mashed potatoes bowl (and the martini glasses) and get a bit creative! In fact the Bob Evans fresh thinking chefs, warm their martini glasses and fill them with their own mashed potato creations.  They have created an assortment of gourmet recipes that incorporate the famous Bob Evans Mashed Potatoes with delicious toppings with themes including Mediterranean, French and American Regional, Southwest and even some that use the Bob Evans Mashed Sweet Potatoes. 

I was given the opportunity to try out some of the Bob Evans Mad About Mashed recipes and to have a "Mashini" party--sort of build your own mashed potato recipe in a martini glass party--it's fun, just go with it! It was a fun way to make mashed potatoes (one of my all time favorite foods) into a fun and full meal--add your protein & veggies right too it and you have a delicious meal all in your martini glass! Now we decided to go with their American Regional theme suggestions (the other recipes sound wonderful too but we went with what we knew the kids would eat!). We decided the Club Mashtini, worked best for our family. Here is the recipe we used as our inspiration:

CLUB MASHTINI

Prep time: 25 minutes

Serves: 4 mashtinis

INGREDIENTS: 

1 package (24 oz.) Bob Evans Original Mashed Potatoes

1/4 cup Swiss cheese, shredded

1/4cup ham, diced

1/4cup Bob Evans oven-roasted diced turkey (from Bob Evans Restaurant) or 1/4 cup of any diced, cooked turkey

1/4 cup cooked bacon pieces, crumbled

1/4 cup ranch dressing

4 mini gherkin pickles (optional)

DIRECTIONS:

1. Prepare Bob Evans Original Mashed Potatoes by following the recommended microwave instructions on the package.

2. Place about 1/3 cup (1/8 package) of mashed potatoes in a martini glass.

3. Sprinkle 1 Tbsp. diced ham on top of potatoes.

4. Place another 1/3 cup (1/8 package) of mashed potatoes on top of diced ham.

5. Sprinkle 1 Tbsp. of each on top of mashed potatoes: Swiss cheese, turkey and crumbled bacon pieces.

6. Lightly drizzle ranch dressing over toppings.

7. Garnish with toothpick and sweet gherkin. 

Now, we changed a few things up a little bit for my son--we used American Cheese instead of Swiss and we added some steamed broccoli florets to his as well. I decided since kids were involved--we built their mashtini's in clear plastic cups (the martini glasses are fun but just too glass and not stable enough for my active 5 year old--the adults got to use them) and we let them build their own from the ingredients I had set out--it always amazes me, how much better kids eat when their are involved in making it. They also gave me some alcoholic drink ideas for the traditional use of the martini glass (ie Watermelon Martini), but given who we had with us--I ended up not making them and we just ate the watermelon straight!  Bob Evans Mashed Potatoes make this meal so quick and their mashtini ideas in their Mad About Mashed campaign, really inspires my taste buds, I can't wait to try other ideas out!
